I have contrasting beliefs when it comes to recipes.  Sometimes I love to try new recipes and experiment with different ingredients and be a real rebel.  Other times, I stick to the tried and true recipes that have been in my family for generations.  This brownie recipe is one of those recipes.  My mom never used a brownie mix in her life.  She made everything from scratch.  Truthfully, these scratch made brownies really don’t take much more time than a boxed mix and are oh-so much better.  You can omit the walnuts if you don’t care for them.  I usually make half the pan with walnuts (because I love them) and the other half of the pan I leave plain for those in the family who don’t care for nuts.  I aim to please!  Oh, and please don’t mind the missing brownie from the picture…sometimes I just can’t wait to try things before I post.

Ingredients
  

  • 2 cups sugar
  • 1 cup oil
  • 4 eggs
  • 2 tsp. vanilla
  • 1 tsp. baking powder
  • 2 cups flour
  • 2/3 cup cocoa
  • 1 tsp. salt
  • 1 cup coarsely chopped walnuts

Instructions
 

  • Cream sugar and oil.
  • Add eggs and vanilla.
  • Add dry ingredients.
  • Spray a 9x13 pan with cooking spray. Pour batter into prepared pan. Top with chopped nuts, if desired.
  • Bake 350 degrees for 30 minutes.
